I love my new pairing knife. It is super sharp and very comfortable to use and makes easy work of veggies and meat. Especially things like tomatoes and peppers are sliced rapidly with getting squished.

These knives are superb!!! I felt like I was cutting through hot butter when I was cutting through and butchering a whole beef shoulder. I have been through multiple knives from Japanese steel to multiple different German and western steel knives. These have definitely upped my kitchen skill and they are a beautiful talking piece when guests are around.

It is wonderfully sharp. It’s heavy on the blade side and could use some more weight in the handle for better balance when using it. It would make for more control.

This smaller, slimmer knife is a dream for all slicing of veggies. I find myself reaching for it for any dissecting of tendons, etc from portions of meat. I do look forward to an even smaller, 4 inch, true paring size, more convenient for peeling.
