We all know that Memorial Day is basically the official kickoff to Summer and BBQ season. And although, the situation of the world is not ideal, now, more than ever, we need a long weekend celebration at home filled with laughter and good food. People are already starting to clean up their grills, sharpen their handmade knives and get new recipes for their 3-day weekend menu. And you too should think about stepping up your BBQ game this year with these delicious and easy to make recipes.

1. Spicy Lemon Chicken Kabobs

It’s time to spice up your usual chicken kabob recipe and surprise the family on your Memorial Day celebration. The juicy and tasty flavour of this recipe will leave everyone asking for more kabobs. 

Ingredients

  • 1/4 cup lemon juice
  • 4 tablespoons olive oil, divided
  • 3 tablespoons white wine
  • 1-1/2 teaspoons crushed red pepper flakes
  • 1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
  • 1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 medium lemons, halved
  • Minced chives

Instructions

  • In a large shallow dish, combine lemon juice, 3 tablespoons oil, wine, pepper flakes and rosemary. Add chicken and turn to coat. Refrigerate up to 3 hours.
  • Drain chicken, discarding marinade. Thread chicken onto 6 metal or soaked wooden skewers. Grill, covered, over medium heat until no longer pink, turning once, 10-12 minutes.
  • Meanwhile, place lemons on the grill, cut side down. Grill until lightly browned, 8-10 minutes. Squeeze lemon halves over chicken. Drizzle with remaining oil; sprinkle with chives.

2. Barbecued Burgers

You can’t have a Memorial Day BBQ and not make the classic burger. You may find some new ingredients in this recipe so go ahead and try it out.  

Ingredients

Sauce:

  • 1 cup ketchup
  • 1/2 cup packed brown sugar
  • 1/3 cup sugar
  • 1/4 cup honey
  • 1/4 cup molasses
  • 2 teaspoons prepared mustard
  • 1-1/2 teaspoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon liquid smoke
  • 1/8 teaspoon pepper

Burgers:

  • 1 large egg, lightly beaten
  • 1/3 cup quick-cooking oats
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 1-1/2 pounds ground beef
  • 6 hamburger buns, split
  • Toppings of your choice

Instructions

  • In a small saucepan, combine the first 10 ingredients. Bring to a boil. Remove from the heat. Set aside 1 cup barbecue sauce to serve with burgers.
  • In a large bowl, combine the egg, oats, 1/4 cup of the remaining barbecue sauce, onion salt, garlic salt, pepper and salt. Crumble beef over mixture and mix well. Shape into six patties.
  • Grill, covered, over medium heat for 6-8 minutes on each side or until a thermometer reads 160°, basting with 1/2 cup barbecue sauce during the last 5 minutes. Serve on buns with toppings of your choice and reserved barbecue sauce.

3. Chicago-Style Chicken Dogs

Now, this one is way too easy so you have no excuses for not trying it. Sweet and spicy pickles and peppers make this barbecue favourite a real winner.

Ingredients

  • 2 jarred pepperoncini peppers, thinly sliced, plus 1 Tbsp brine
  • 1 tsp. honey
  • 1 tsp. yellow mustard, plus more for serving
  • 1 tsp. poppy seeds
  • 1/4 small sweet onion, thinly sliced
  • 4 fully cooked chicken sausages
  • 4 hot dog buns
  • 2 small plum tomatoes, sliced into half-moons
  • 4 dill pickle spears
  • 1 small romaine heart, thinly sliced (about 3 cups)

Instructions

  • Heat grill to medium. In a bowl, whisk together pepperoncini brine, honey, and mustard; stir in poppy seeds. Add pepperoncini peppers and onion and toss to coat.
  • Grill sausages, turning occasionally, until lightly charred and heated through, 10 to 12 minutes. If desired, grill buns.
  • Stuff sausages into buns along with tomatoes and pickles. Toss poppy seeds and onions with romaine and spoon on top of sausages. Serve with remaining romaine mixture and extra mustard if desired.

4. Mexican Street Corn

This delicious corn is common street food in Mexico and It's often served on a stick. Also, don’t you worry; you can make it right on the grill like you would traditional corn on the cob.

Ingredients

  • 6 ears corn, shucked and cleaned
  • 1/2 c. mayonnaise
  • Chilli powder
  • 1/3 c. Grated cotija cheese
  • Freshly chopped cilantro
  • Lime wedges, for serving

Instructions

  • Preheat grill or grill pan to medium-high. Grill corn, turning often until slightly charred all over, about 10 minutes.
  • Brush corn with a layer of mayonnaise and sprinkle with chilli powder, cotija, and cilantro. Serve warm with lime wedges.

5. Mediterranean Spiced Burgers

This Mediterranean twist to the classic burger will be everyone’s holiday favourite this Memorial Day. It’s very easy to make just make sure to form the patties up to 3 hours before grilling but hold the salt until the last second.

Ingredients

  • 1 lb. ground lamb, beef or turkey
  • 1/2 c. packed fresh cilantro
  • 2 cloves garlic
  • 1 tsp. ground coriander
  • 1/3 c. ketchup
  • 1 tsp. curry powder
  • 4 buns
  • 1 small red onion
  • Crumbled feta
  • Grill pan

Instructions

  • Finely chop 1/2 cup packed fresh cilantro. Crush 2 cloves garlic with the press. Mix cilantro and garlic with 1 pound of ground beef, lamb or turkey, plus 1 teaspoon ground coriander.
  • Heat grill pan to medium-high. Form meat mixture into 4 patties that are about 1/2 inch thick; sprinkle each patty with kosher salt. Add burgers to grill pan and cook for 8 to 10 minutes, turning once halfway through.
  • While burgers cook, stir together 1/3 cup ketchup and 1 teaspoon curry powder. Toast 4 buns. And, slice 1 small red onion.
  • Once cooked, serve burgers on toasted buns. Top each with curry ketchup, crumbled feta cheese, red onion slices and cilantro, if desired.
